How to make:
Add all ingredients except tonic water in a shaker with ice, wet shake for a few seconds then strain, toss the ice and dry shake to increase emulsion, double strain in a collins glass, top with tonic and garnish with dry mandarine wheel.

| 1 fl oz | Gin Mare |
| 1 fl oz | Lemon juice (freshly squeezed) |
| 2/3 fl oz | Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix) |
| 3 leaf | Basil leaves |
| 1 fl oz | Egg white |
| 1 fl oz | Mediterranean tonic water |
