
Place the 3 mandarin pieces on a skewer and rest that on the rim of the glass.
1. Select and pre-chill a Rocks glass. 2. Prepare garnish of three mandarin pieces on a skewer. 3. Peel the kiwi and measure out 50 grams of the fruit. 4. Add the kiwi and all remaining ingredients to a shaker. 5. Shake vigorously with cubed ice. 6. Fill the chilled glass with fresh pebble ice and fine-strain the cocktail over it. 7. Rest the mandarin garnish on the rim of the glass.

1 whole | Kiwi fruit (fresh) |
1 fl oz | Novo Fogo Barrel-aged Cachaça |
1/3 fl oz | Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix) |
1/3 fl oz | Lime juice (freshly squeezed) |
2 drop | Orange Bitters by Angostura |
