Cuvée René is fermented with wild yeast. A blend of 2/3 young Lambic and 1/3 old Lambic beer is cellar aged for 6 months with secondary fermentation in the bottle, which are corked and crown capped.


Review and Tasting


Sampled on 21/01/2013

Appearance:

(bottled Sep-12, best before Sep-18) Slight haze, golden amber with thick lasting white head and light lacing.

Aroma:

Yeasty, sour fruit, fresh straw, apple chutney and quince.

Taste:

Very sour and tart. Earthy, dusty sour apricot, dry cider, fino sherry, cooking apple fruit and yeast.

Aftertaste:

Dry, very sour vermouth-like finish. Devotees of gueuze-style beers will lovingly admire but most with find the full-on sourness too challenging to appreciate.
