Distilled with 20 foraged botanicals: juniper, angelica roots and seeds, liquorice root, sweet flag, bilberries, haw berries, wild rosehips and petals, lemon balm, meadowsweet, woodruff, nettles, wild fennel, lovage, chamomile flowers, elderflowers, red clover flowers, oak moss and Chobham honey.

Named after Stovell's Restaurant which in turn takes its name from husband and wife team Fernando and Kisty Stovell, Stovell’s Wildcrafted Gin is low pressure (vacuum) distilled with Soil Association certified organic wheat spirit and bottled by the bartenders and chefs at the restaurant. Each group of botanicals is distilled separately and then blended with the base spirit and a little honey. The spirit is diluted back to the 42% alc./vol. bottling strength using mineral rich local water which is run through bamboo charcoal to soften. After leaving for a couple of weeks to stabilise, the gin is filtered using a wide-pore natural cellulose filter to remove pollen particles and finally hand-bottled. The twine on the neck of every bottle is also hand-tied.

Appearance:

(sample bottle No. 16/1 bottled 1/Apr/15) Crystal clear.

Aroma:

Nutty angelica root and clean stable straw with subdued juniper, faint floral and liquorice notes.

Taste:

More piney juniper is evident with woody liquorice and more of the nutty angelica notes found on the nose.

Aftertaste:

Nutty balsawood, mild piney juniper and black pepper spirit.

Overall:

This low pressure and temperature distilled gin has an interesting nutty character with subdued juniper.
