A blend of 60% Chardonnay, 20% Chenin Blanc, and 20% Cabernet Franc, blended after the first fermentation. Bottled with a dosage of cane sugar and yeast causing a second fermentation in the bottle. The wine is the cellar aged on-the-lees for at least 36 months prior to disgorging and re-corking.

Appearance:

Clear, Pale golden yellow with streams of small bubbles.

Aroma:

Green grapes and overripe pear, zesty lemon and lime, floral elderberry and very faint smoked almond.

Taste:

Faint honeyed and ripe pear sweetness balances crisp dry acidity with brioche, green apple, zesty lemon, biscuit, and faint floral notes. Attractive notes of buttery chardonnay.

Aftertaste:

Long, dry finish with cleansing acidity, lemon freshness and light biscuit.

Overall:

Light, fresh, well-balanced, easy drinking “Traditional Method” sparkling wine which is perfect for summer drinking. Characterised by with pleasing biscuity/brioche notes, zesty lemon/lime and faint floral complexity.
