This “Vino De Mezcal” is made by Rogelio Martínez Cruz in Santa Maria Albarrades village using only wild Jabali maguey. This take 18 to 20 years to reach maturity before being harvested by hand and cooked in a traditional earth pit for 30 days. The roasted piña are milled using

a horse-drawn mill stone and fermented for 9 to 12 days in wooden tanks with natural airborne yeast. Water from a nearby spring called Agua Santa (sanctified water) is added to the mash before Don Rogelio double distils this in a copper still.

Released in 2017 and awarded Best New Spirit or Cocktail Ingredient at Tales of the Cocktail Spirited Awards 2018.

Appearance:

(sample bottle LOT AB-161) Crystal clear.

Aroma:

Pungent, smoky and earthy with barbeque charcoal, baked apple pie and what the back label aptly describes as “parmesan rind”.

Taste:

Slightly sweet baked apples with heavily smoked pepper-rubbed meat, tarragon and faint crème de violette.

Aftertaste:

Faint star anise notes emerge on the long pleasingly smoked and spiced finish.

Overall:

Smoked apple pie and parmesan rind sums up the nose, while the palate balances smoke, rich baked apple, crisp acidity and spice. Wild Jabali is deservedly a multi-award winning mezcal.
