The first release from Highland Boundary, this "Modern Scottish Spirit" is made by redistilling botanicals with neutral spirit in a copper pot still (as is traditional for gin). The birch buds and elderflowers that flavour this spirit are hand-picked from woodlands near the on-farm distillery.

Taste:
Superbly clean with elderflower and birch flavours nestling harmoniously with subtle spirituous spice.
Aftertaste:
Delicate spirituous spice with lingering floral elderflower.
Overall:
Highland Boundary Birch & Elderflower Spirit makes is an interesting alternative base for the numerous vodka-based cocktails made with elderflower liqueur. It boosts elderflower notes while the birch buds add a touch of extra complexity.
