Freya is made from the sap of birch trees harvested annually forests of northern Europe in early spring, frozen to keep fresh, then then fermented and distilled in copper pot stills in the UK. This is then infused with oak, birch and apple wood smoke.

Appearance:

(sample bottle batch 00-0003, bot No. 077/200) Crystal clear.

Aroma:

Reminiscent of smoked cream-of-soda with subtle bacon notes and vegetal peppery spice.

Taste:

Dry. Like wood smoked tequila but more subtle and with a quite different smokiness to mezcal. Earthy smoke with black pepper spice and creamy mouthfeel.

Aftertaste:

Long elegant smoky finish with light white pepper spice, earthy notes and faint vanilla.

Overall:

A very interesting spirit with which to introduce smoky notes to cocktails – cleaner and more elegant than mezcal, subtler than Islay whisky and more interesting than smoked vodka.
