St. George Pear Brandy is made from aromatic dry-farmed, organic Bartlett pears and St.George use some 30 pounds of fruit to make each 750ml bottle. The small pears are fermented over a 10 day period using 60°C champagne yeast. Sulphur dioxide is used to inhibit wild yeasts.

The fermented fruit is then distilled in an Arnold Holstein copper still in a single run.

Formerly under the Aqua Perfecta label Pear Brandy has been St. George's flagship spirit since 1982. In 2013, Lance and Dave have brought their range of superb fruit brandies under the St. George banner. These unaged fruit brandies capture the olfactory character of the fruit at its peak of ripeness.
