Hangar One is named after the distillery's rented space at the old Alameda Naval Air Station in California. The huge hangar sits on the edge of a disused runway (now a bird sanctuary) with panoramic views of the Bay Bridge and San Francisco. The colossal space houses an Arnold Holstein still.

Made using neutral spirit distilled in the Midwest from Great Plains wheat blended with a distillate of Viognier grapes made in Hanger One's own Holstein still. This little still has a large boil ball to encourage reflux and a three bladed paddle to keep the wine moving in the pot and prevent burning. The vapour passes through two short columns, the first with twelve plates and the second with four plates. Between 10% and 25% Viognier distillate is blended with the wheat neutral spirit depending on the wine distillation. Careful blending is required to achieve consistency between batches.

Appearance:

Crystal clear.

Aroma:

Clean, subdued with only the merest hint of cereal, violet and pear.

Taste:

Rounded with a soft mouth feel with pleasant grainy notes and hints of red pepper, cracked black pepper. Faint pear, violet and toasted aniseed bagel.

Aftertaste:

Lingering cracked black pepper spice with faint earthy pear skin.
