1 1⁄2 oz | Patrón Silver blanco tequila |
3⁄4 oz | Luxardo Apricot Albicocca Liqueur |
3⁄4 oz | Lime juice (freshly squeezed) |
1⁄6 oz | Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup) |
2 drop | Saline solution 4:1 (20g sea salt to 80g water) |
Apricot liqueur replaces triple sec in what otherwise follows a broadly classic Margarita recipe. As with my preferred Margarita recipe, my previous recipe was based on reposado tequila with half bar spoon of agave syrup, but a Toreador better suits the clean fresh notes of a blanco tequila with a spoon of sugar syrup.
I updated this recipe in January 2025. The Previous recipe: 50ml (1⅔oz) reposado tequila, 25ml (5/6oz) apricot brandy liqueur, 25ml (5/6oz) lime juice, 2.5ml (½ barspoon) agave syrup and 4 drop margarita bitters.
This variation on the Margarita was first published in William J. "Billy" Tarling's 1937 Café Royal Bar Book.

As well as this Margarita riff, Tarling also lists another cocktail called a Picador, which is identical to the modern-day Margarita. When considering the origins of the Margarita, it's worth remembering that Tarling's book was published 16 years before the first written reference to a cocktail named Margarita.

“peated” Siete Misterios Doba-Yej is just lovely for this cocktail. Haven’t found your bitters in my home market but a floral bitters added should be perfect.
