How to make:
SHAKE first 4 ingredients with ice and fine strain into ice-filled glass. TOP with sparkling wine.
| 8 fresh | Mint leaves |
| 1 1/2 fl oz | Calvados / apple brandy / straight applejack |
| 1 1/2 fl oz | Apple juice (cloudy & unsweetened) |
| 1/4 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
| 2/3 fl oz | Brut champagne or sparkling wine |

History:
Our adaptation of Colin Field's signature drink. Collin first served this drink on 31 December 1994 at Bar Hemingway Bar in the Paris Ritz Hotel for Jean-Louis Constanza. Upon tasting it, Jean-Louis exclaimed, "Serendipity!"

- 14% alc./vol. (28° proof)
- 16.5 grams of pure alcohol
