Serve in a Coupe glass

Ingredients:
5 fresh Blackberries
2 oz Chairman's Reserve Spiced Rum
34 oz Lemon juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Egg white replacement (vegan)
1 barspoon Charcoal powder
× 1 1 serving

Garnish: Float 3 drops Angostura Bitters

How to make:

MUDDLE blackberries in base of shaker. Add other ingredients, SHAKE with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass.

A Rum Sour blackened with blackberries and charcoal powder. The black charcoal which makes this cocktail black does little for the taste and given the potential issues with charcoal this tasty cocktail is perhaps best appreciated without its addition (as illustrated photographed here).

History:

A cocktail which was widely made to celebrate the total solar eclipse which worked its way across the USA on 21 August 2017 – the first for 38 years.

As I very seldom use spiced rum I switched to a mixture of 4,5cl aged rum and 1,5cl Bitter Truth Falernum which worked well. I would love to test Simon's Falernum and the Easy Jiger and ..., but the Brexit makes sending from UK very sorrily very difficult...
