
Express lemon peel onto top of drink (the oils should pop the larger air bubble on the surface of the cocktail giving you a very flat surface to work with) 5 drops of yellow chartreuse on top like footprints in the snow.
Chill coupe glass
Combine all ingredients except yellow chartreuse into shaker tin.
Whip ingredients without ice in tin, to incorporate protein from the egg whites.
Add ice to tin.
Shake vigorously.
Strain and fine strain contents into chilled coupe glass.
