Garnish:

Garnish is dehydrated strawberries ground up into a powder and dusted over the top.

How to make:

Strawberry syrup- 1:1 strawberries and sugar sous vide for 3 hours @ 125 F
Meausure ingredients into a shaker. Dry shake first. Then add ice and shake again. Double strain into a coupe. Strawberry powder is then dusted over the top.

1 1/2 fl oz Hayman's Old Tom Gin
1/2 fl oz Lemon juice (freshly squeezed)
1/2 fl oz Strawberry sugar syrup
1 fl oz Egg white
1/2 fl oz Dupont VSOP Calvados
1/2 fl oz Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix)
