Lemon zest
1. Select and pre cool a Coupe glass cup.
2. Shake all materials with ice cubes.
Fine filter into cold glass.
3. Wipe the lemon skin with a grater to let the lemon dander float naturally above the foam of the cocktail
| 3/4 fl oz | Pallini Limoncello liqueur |
| 1 1/2 fl oz | Nonino Chardonnay in Barrique Grappa Monovitigno |
| 1 fl oz | Espresso coffee (cold/chilled) |
| 1 dash | Saline solution (20g sea salt to 80g water) or merest pinch of s |
| 1 dash | Orange blossom water / Orange flower water |
