Review

A discreet polished concrete entrance leads down to this stylish basement affair, set amid the chaos of Hollywood Road. Skeletal, sculptural trees, decked with lights, pay homage to the name, as do the cut-out screens, woodcut menus and abstract fern forms behind the bar.

Cocktails are taken very seriously here - there's a four-part food and cocktail pairing (HK$488) available Monday to Thursday, as well as seasonal cocktails, featuring ingredients from pumpkins to pear.

The emphasis is on tweaked classics: think a Lavender Tom Collins, Galangal Mojito, Saffron Martini, or Beet Negroni. And, yes, we know that sounds implausible at first blush. But beetroot-infused gin and cherry-infused Campari make for a Negroni with a fruity, earthy flavour that's all its own.

Peckish? There's a solid bar snack menu with classics from cheese and charcuterie to ye olde mac 'n' cheese.
