In 1805 (the date on the label), Henri-Louis Pernod established The Maison Pernod Fils distillery in Pontarlier to produce Pernod Absinthe. This modern day Pernod Absinthe is made using an interpretation of his 19th Century recipe at the historic Caves Byrrh Distillery using Pontarlier wormwood.

Appearance

Clear pale green, louches when water is added.

Aroma

Grassy and floral with violet blossom. Fennel, coriander and aniseed. With water: anise, fennel and coriander. Still grassy but floral aromas are more subdued. Clean and fresh.

Taste

With water: Dry and slightly on the bitter side. Woody herbal wormwood notes are freshened and lifted by coriander and aniseed.

Aftertaste

Long, slightly bitter, woody herbal finish.

Overall

Drier than many of its competitors with a distinctive herbal wormwood bitterness - Pernod Absinthe benefits from a little sugar so water your cube judiciously.
