Arthur Guinness started brewing ales initially in Leixlip, then from 1759 at the St. James's Gate Brewery where he took a 9,000 year lease at £45 per annum for the then unused brewery. The Guinness brewery in Park Royal, London closed in 2005 and production of all Guinness moved to the Dublin brewery.
Guinness stout is made from water, malt, barley, hops and brewer's yeast. A portion of the barley is flaked and roasted to give Guinness its dark colour and characteristic taste.
Draught and canned Guinness attains its creamy head and smooth character by use of nitrogen (N2) as well as carbon dioxide while the Original Extra Stout contains only carbon dioxide so has a more acidic taste.
