|1 1⁄2 fl oz||Cognac (infused with vanilla)|
|1 1⁄4 fl oz||Sauvignon blanc white wine|
|1 1⁄2 fl oz||Fresh pressed pineapple juice|
|1⁄4 fl oz||Giffard Sugar Cane Syrup|
A relatively dry cocktail where the vanilla combines beautifully with the cognac and the acidity of the wine balances the sweetness of the pineapple juice.
Created in 2003 by Yours truly (Simon Difford), London, England.
A cognac driven riff on the Palermo cocktail we discovered in 2001 at Hotel du Vin, Bristol, England.
Named, not after the Universal Serial Bus used to connect PCs and peripheral devices, but after the grape varieties Ugni and Sauvignon Blanc. Ugni Blanc is the most common grape variety in Cognac, while Sauvignon Blanc wine seems to suit this drink, (although it also works well with other grape varieties).
