How to make:
POUR the pepper-infused Campari, mandarin juice and chickpea water into a mixing tin, BLEND with a hand-held electronic whisk and pour into ice-filled glass. Top with the G&T float.

“It was a summer evening and I was alone at home. I had nothing special planned, so I decided to organise an evening of perfect relaxation: I cooked “chickpea flatbread”, a dish that always brings back memories of my past, and I got ready to eat it on the couch in front of a movie. While my dinner was slowly cooking in the oven, I opened the window to let the sea breeze in.
“At that moment, some music carried by the wind caught my attention: it was a sweet, seductive rock ‘n’ roll ballad, sung by two voices that blended perfectly together like Campari and Gin. I am a big music fan and I was surprised that I didn’t recognize the musicians…
“By this point, I was too intrigued to continue my night in, so I put the hot flatbread in a paper bag along with a mandarin from the garden, quickly left the house and followed the music to find out where it was coming from.
“I walked for a few minutes and I reached the beach, which seemed to be the source of the music. Now I could hear it loud and clear – the musicians must have been behind that rock.
“Halfway up the ascent, the music began to fade and when I reached the top, I could hear nothing but the sound of the waves. From where I was, I could see over the gulf in every direction, but there was nobody in sight for kilometres. Even the sand seemed smooth, as though no one had walked on it.
“I went down to the beach and sat down on the warm sand. There was an atmosphere of otherworldly calm as I got out my supper and began to eat, watching the sun set. At that moment, I realised that the music had been a gift intended just for me, a message that someone had entrusted to the wind, which had delivered it to me personally. I was filled with a sense of peace as I slowly retraced my footsteps, trying to hold all those emotions inside me.
“When I got back home, I began to think about how to return that precious gift to the world and I decided to transform the feelings of that magical evening into a cocktail. I called it The Spirit Of Rock.”
