In an exciting final on the the 9th of July, Troy Rondon Guasque was able to dazzle the crowd and the judges by not only clearing the fastest time on the speed round, plus the highest scoring drinks as well!
The challenges of this year's NBC final was made of 4 parts:
the presentation of the contestant, a speed round consisting in 4 cocktails aimed under 3 minutes, one longdrink and one shortdrink each made twice within five minutes.
Troy Rondon Guasque, who had to travel the furthest from Nijmegen where he bartends at the well-known cocktail bar Demain, was able to not only be the best all-round winner, but the best in 3 of the 4 categories individually.
Here are the two winning recipes that got Troy the win:
in a shaker put all ingredients. Shake without ice first for ten seconds. Add ice cubes and shake vigorously for 10 seconds . Strain in a coupe.
Garnish with a stripe of Peychaud's bitters and a dust of dried lavender.
40 ml CATZ Dry Gin
15 ml Italicus
15 ml Fresh Orange Juice
20 ml Lemon Sherbet*
20 ml fresh egg white
*to make the Sherbet, I start with an Oleo Saccharum of lemon peel (86 grams) and sugar (130 grams) and i add 55 ml fresh lemon juice. After 4 hours it is ready to be filtered and to be used.
"Sling & Sand"
Shake over ice cubes vigorously for 10 seconds and strain in a coupe. Garnish with dried pineapple.
20 ml Siete Misterios Doba-Yej Mezcal
20 ml Cherry Heering liqueur
20 ml Suze gentian
20 ml Pineapple juice*
*blend 200 grams fresh pineapple with 70 ml pineapple juice and 1/2 bar spoon citric acid. Filter after blending.
