This week, Lucas Sedlmaier, bartender at Rosalia’s Menagerie in Amsterdam, won the first ever Dutch finals of the Amaro Montenegro Vero Bartender competition. Check out his surprising banana peel-twist on the classic Toronto cocktail that amazed everyone!
Let start with the name:
Monte is the cute nick name for Amaro Montenegro
Ba represents the banana peel
To It’s a twist on the classic Toronto cocktail (Amaro&Rye)
50 ml Amaro Montenegro
20 ml Rye Whiskey
10 ml home made cumin & umeboshi syrup
2 ml absinthe
Stir the ingredients in a mixing glass with ice, strain and pour the cocktail in a non-reactive, resealable bag filled with a banana peel.
Release the air in the bag and place in a iSi (whipped cream) bottle filled with water. Charge with a nitro cartridge, wait for two minutes. Congrats, you have just rapid infused a banana peel! Pour and strain via a coffee filter. Serve cold in a vintage crystal coupe glass. No Garnish.
