"I always wanted to cram some eminent person into a cocktail glass and then, with an ease, drink it through a century long journey back to history, to enjoy the emotions when I heard about London and Johan Gregor Mendel for the first time in a school. J.G.Mendel is very important person for Brno. If you are in Brno you can see Mendel everywhere....there is Mendel square, Mendel University, Mendel library and others. Mendel is famous because od hi genetics experiment with peas, because he propagated the peas and he proofed law of heredity.

Lovely and cosmopolitan Brno is a place where a spanish liveliness, french bohemianism and london peculiarity unite together and I managed to combined it all in my cocktail. Thanks to a green little peas where it all begins and ends I propose a toast to Brno and London, to how close they are to me and to the fact that together they taste like home."

50 ml Beefeater 24
20 ml Pea syrup
15 ml Freshly squeezed lemon juice
10 ml Fino sherry
3 dash Absinthe
Grapefruit peel

Garnish with lemon and sencha curd.

Put all ingredients except absinth into a shaker. Wash out a frozen glass with three drops of absinth and from the outside smear the glass with sencha lemon curd. After that shake all the ingredients in shaker and double strain into a cocktail glass.
