Winning cocktail: The Balancing Act

1.5 oz Patrón Reposado
0.5 oz Kikusui Funaguchi Nama Genshu Sake
0.5 oz Sfumato Rabarbaro
0.25 oz Dolin Genepy De Alpes
0.75 oz Lemon juice
0.5 oz Sirop Capillaire*
1 Egg white
Orange wing and mist of bergamot oil for garnish

*Sirop Capillaire:
Bring 32 ounces of water to a boil. Remove from heat and add 32 ounces sugar, whisk until completely dissolved. Add 15g of dried maidenhair fern. Let steep for 45 minutes. Add 3 grams orange blossom water, then strain, bottle, label and store.

Chill a collins glass. Combine all ingredients in a cocktail shaker and dry shake vigorously for 45 seconds.

Add 1 2x2" ice cube to the shaker and shake vigorously again.
Strain into chilled collins glass.

Garnish with a manicured orange wing and a mist of bergamot oil.
