Inspiration:
Bols Genever is synonymous with Dutch culture, and for this reason, Mr Fogg's Gin Parlour have based the concept of their cocktail behind Dutch heritage and history of Genever. Each ingredient has been meticulously picked to represent key components and flavours that are renowned for their presence within everyday culture in the Netherlands such as a Dutch IPA being used, a biscuit flavoured syrup, licorice, and a green apple which is common in Dutch desserts.
As a speakeasy, our bar is themed perfectly around the Jerry Thomas cocktail revolution, when Genever was a key ingredient in many cocktails. Our bar team strives for the cocktail making to be a ritual in itself, in the sense that we build the ingredients into the shaker one by one. We ensure that the drink is thoroughly Dutch from the first ingredient, to when it is shaken, double strained, and finally garnished with the chocolate apple cherry. Our aim is for it to be an enjoyable taste of The Netherlands and therefore symbolic of Bols Genever’s roots and heritage, whilst also pushing the boundaries.
