Good pineapple liqueurs are a fairly recent development as the enzymes in the fruit make infusing fresh pineapples in alcohol to produce a stable and tasty liqueur tricky. However, a small number of producers have forgone using "natural" flavourings that taste like pineapple in place of pineapple itself and risen to the challenge. Let's celebrate their achievement with pineapple liqueur cocktails.
Daiquiri De Luxe
With: Light rum, pineapple liqueur, lime juice, lemon juice and orgeat (almond) syrup.
We say: A Daquiri made "De Luxe" by a touch of Tiki with added notes of almond and pineapple.
Champagne Piña Colada
With: Light rum, agricole rum, pineapple liqueur and champagne.
We say: Deliciously creamy pineapple and coconut enlivened by champagne with rum notes shing through.
Pineapple Daquiri (Difford's recipe)
With: Pineapple rum, aged rum, pineapple juice, lime juice, pineapple liqueur, sugar syrup and Daiquiri bitters.
We say: Tangy pineapple fruit laced with characterful rums.
Pineapple Martini (Difford's recipe)
With: Vodka, pineapple juice, lime juice, pineapple liqueur, sugar syrup and Tiki bitters.
We say: Like the above but with vodka's clarity shining the light on the fruit.
Summer of Matador
With: Blanco tequila, watermelon liqueur, pineapple liqueur, lime juice and agave syrup.
We say: A fruity, tequila-laced sour.
Tropical Pineapple Daiquiri
With: Light rum, pineapple liqueur, lime juice, orgeat and Daiquiri Bitters.
We say: Pineapple and rich almond flavours add a tropical touch to this refreshing Daiquiri.
