“I am a bartender in the 12th arrondissement of Paris at the Calbar, 82 Rue de Charenton, where the waiters work in their underpants. It is a little cocktail bar where it feels good to hang out, with a casual atmosphere and a quality service.
“About a year ago, I decided to leave Britany where I spent my youth and move to Paris to be a bartender. I trained at “L’école Bar Spoon” to be a certificated professional bartender. One week every month, I would go to school to learn all the basics, the spirits, the stories, the technique as well as the practice, the customer relationship and the management of the bar. And the rest of the month, I would work at the Calbar, trained by Thierry Malikian, Christophe Sichanh and William Brighel, who they taught me everything.
“Since April 2015, I’ve been a fulltime bartender at the Calbar. Passionate about my work and the new bar trends, I wanted to challenge myself and participate to contests. This is how I decided to create my own sling and submit the recipe to the Heering Sling Award 2015.”

Glass: Coupe
Garnish: Dried rose petals
Method: Shake all ingredients with ice and strain back into shaker. Dry shake (without ice) and strain into chilled glass.
• 4cl Cherry Heering liqueur
• 4cl Lemon juice
• 2cl Homemade pomegranate syrup
• 2cl Egg white
