Australian born but internationally raised, Brendan has spent the last ten years working on three continents to develop a true appreciation of what is the right serve for a local market. Bartending started as a way to pay off the European travel dream but as the years went by bartending became more of a career and less of a pastime. He discovered a passion for cocktails and the hotel bar scene.
Starting with Hyatt Hotels in 2012 he has been lucky enough to open bars in both London and New York City with Hyatt before landing in Dubai. He is a big believer that any cocktail menu should be a representation of the team so they can all own the bar. To that end he sought the help and input of multiple bartenders in putting this Peter F Heering Sling recipe together.

“No Singapore Sling is complete without Cherry Heering, there might be variations but its never complete without Cherry Heering”
Method: Blend all ingredients and pour over crushed ice.
• 40ml Gin
• 20ml Cherry Heering
• 15ml Triple sec
• 3 drops Angostura Aromatic bitters
• 40ml Passionfruit syrup
• 40ml Lime juice
• 60ml Pineapple juice
• 2 drops of Peppercrab House made Chilli Oil
• Quarter sized piece of fresh ginger
• Small handful of corriander
