Baile an Mhuilinn,
The first in a wave of newly built Irish distilleries, Dingle is the brainchild of Oliver Hughes, CEO of Porterhouse Brewing Company which owns Dublin’s famous Temple Bar. Built in 2012, the distillery is housed in a former saw mill named Baile an Mhuilinn (Milltown in Irish), close to the town of Dingle in County Kerry, Ireland, the most westerly town in Europe.
The distillery started production of Dingle Original Gin and a DD Pot Still Vodka from Swedish grain neutral spirit in October 2012 using a still called Oisín.
On 29th November 2012, the distillery also started fermenting and triple distilling malted barley using three Forsyths of Rothes built pot stills. Once it completes its aging period (around four to five years) the triple distilled single malt produced here will be bottled as Dingle Green and Dingle Gold whiskey. A production of some 100,000 bottles per year is planned.
