In the small town of Santiago Matatlán in Oaxaca in south-western Mexico, Los Danzantes mezcal distillery is run by a group of restaurant owners with Hector Vásquez Abarca both the Master Distiller and production manager.
Established in 1997, the distillery is housed in a traditional mud brick building and mill stones are still used for crushing the cooked agaves. Incidentally Los Danzantes doesn’t have its own horse, they rent one when required. Fermentation uses wild yeast and takes place open pine vats. Los Danzantes is double distilled in direct gas fired copper pot stills with the second distillation in a 300 litre Portuguese made copper pot still.
