The brainchild of three of Australia's best bartenders - 2012 World Class winner Tim Philips, Adi Ruiz and Rob Sloan - this tiny, one-room bar sits down a remarkably corporate-looking lane off Pitt Street.
The concept is simple: regularly changing seasonal drinks based on what's good in the markets on the day, a curated selection of spirit specials, and one to one consultations to find the right drink for you.
All fruits are handpressed, ice hand-chipped and syrups homemade, but the deliberately scruffy style of the bar - with drawings tacked to the scuffed walls, raw ply forming a screen around the bar, and wellworn leather sofas - stops things feeling in the least pretentious.
