I just got this bottle, pretty interesting. More earthy than grassy to my mind. It's dry grass, earth, and yes, hay. The closest I can compare to is the earthiness of Suze without the bitterness. It is quite interesting.

Here is what I made with it:
1.5 Oz gin (Botanist)
0.75 Alpeggio
0.50 lemon juice
0.25 simple syrup.
