This one is right up my alley. Tart apple up front with the depth of vermouth and sloe gin on the finish. It strikes a perfect balance of being quaffable without you losing interest after a few sips. I can see how you could serve this over ice as well, or even top it off with soda water during the summer.

We sometimes throw in a splash of a deep and brooding but sparkling Shiraz. For the bubbles that you insightfully recommend. We don't think that Persephone would have been satisfied with just soda.

Admittedly my alcohol tolerance is very weak but I lengthened it with pomegranate soda and it was almost perfect (and a little extra flair to match the myths). It might be with the soda a little too acidic (so id lessen the amount of or remove the lemon juice next time) but all the flavors come through and temper the strength of the pomegranate. It's a lovely drink fit for the underworld.

If I make this again (and i probably will) i might replace the apple jack for apricot brandy. That could be really interesting.

I used Spirited Apple Orchard brandy from Phantom V Distillery and skipped the simple, and it cranked this cocktail to 11! It is beautifully balanced. I'd say it's almost a sour, and that Apple brandy is something else! The apple flavor never gets drowned out. It elevates everything I've mixed it with! I wish it were on your list of spirits/liqueurs.
