Does have some latent, underlying interest, but it shows up too late. It's the fruity top notes of the base spirits mostly.. I subbed more pineapple syrup for the sugar syrup and I regret it? At any rate, not much pineapple flavor, just faint aromatic overtones... This drink, however, has potential, but any changes have to be subtle and surgical.
A nice,dry, citrusy cocktail. At first I thought the dusting of cinnamon was and odd addition, but I was wrong. It really added a nice finish to the cocktail and went quite well with the rum/Cognac.
There aren’t may ingredients I don’t have- but pineapple syrup was one. I considered passionfruit syrup for a variety (Simon- you can call that “The Great Man” and publish it)…! But instead I used the Planation Pineapple Rum- and it turned out well! The cinnamon is a good touch.
Having an unseasonal warm day and thought this would be a great way to cool off before dinner. Nice hints of pineapple, but not overpowering. Everything is balanced. As will all rum cocktails, wonderful and refreshing.
