This is such an interesting gin. Oozes authenticity and place of origin, to the extent that it can sometimes be difficult to use harmoniously. Definitely in the London dry style, though the savoury notes from the diverse botanicals are also present. Experimenting with various negroni and martini riffs. Allowing the wild juniper that creates the very forward piney notes to be present without overpowering works well. Bianco negroni and perfect martini were very tasty. G&T can’t go wrong!
