Fruity from the Pineapple
Sour from the Lime
Spicy from the Ginger
Bitter from the Aperol
Smokey/Umami from the Mezcal
and Salty from the Saline Solution

If it wasn't clear till this point; I love this drink!

That's a great tip, thanks. I've added a couple of drops saline to the above recipe accordingly.
