I have now made this with fat wash infused bourbon and the Fee Brothers Bacon Fat Wash. Thank you Simon for bringing this new ingredient to my attention. I found the flavor of the Fee Brothers pleasing and subtle. And sooooo much less effort! Was especially tasty when smoked with maple wood chips.
