The Carino we know and love is a variation on the Negroni, created by Cara Devine in Melbourne, Australia, a few years ago: 30ml dark rum, 30ml Amaro Nonino, 30ml Cocchi Americano and 2 dashes cacao bitters...with a mint sprig as the garnish. A variant substitutes Byrrh for the Americano.
Tart, creamy, and reminding of a lassi with a touch of alcohol, this drink is delicious. I used green chartreuse since that's what I had on hand. Recommend.
