No calvados available (currently holidaying on Mull) substituted the calvados with Cognac. It was delicious -and we will add the apple back in when we get home.
I *really* liked this one - and am glad I saw the comment about dialing back the vermouth a little bit. I don't have the combier so I used a dash of orange bitters, a dash of absinthe, and a few drops each of cardamom bitters, black lemon bitters, cinnamon tincture.
Not having or even knowing where to get Combier, I subbed 1 dash of orange bitters and 1 dash of absinthe. I think it turned out very tasty, though of course I have no idea how similar it tastes compared to the original recipe!
Very interesting in a good way. Like the mixtures of the flavours, but I may tone down the vermouth to 1/2 oz next time. I found the vermouth a bit strong.
