The orange bitters are key to balancing and adding depth to the equal parts aged rum and sweet vermouth. However, go easy with those dashes or bitter orange...
Must have got my dashes just right as this was lovely! Perfectly rounded with nothing fighting for attention in the glass.
My rum was Brugal 1888 and the vermouth Del Professore. I see the other tastings were all around winter time, but this was surprisingly light and summery. I’ll make this one again and again.
Fantastic! Instead of the suggested rum (an ongoing problem with many rum specific cocktails), I used Marks & Spencer’s own Dark Jamaican rum and found a 60-30ml, rum-vermouth ratio to be ideal. Rummy, a touch sweet and great orange notes.
Used Ron del Barrilito and Cocchi. This was as complex as advertised, and less sweet than I had anticipated. Nice to have a Manhattan variation that's a little lower ABV and more tropical in the mix.
Nice and complex but need to try it with a different rum. Used a 5-year column rum (The Navigator) and it was bullied by the vermouth. Orange bitters and zest brings it together.
