Cocchi Americano is definitely a favorite. I slightly prefer spirit-based liqueurs as the shelf life is longer. For vermouth or Cocchi, I store in the fridge, but even then it is important to use relatively quickly. Some favorite drinks that use Cocchi Americano: Cocchi Irlandese, Vesper, Corpse Reviver #2. Really, you can add it to any drink to cut the sweetness and add a little bitter goodness.
Mattei Cap Corse blanc is worth a try. But for a Vesper a combination of Lillet blanc and Caperitif in a ratio of about 3:1 works best for my taste. Cheers!
Nothing has yet to replace it for me but Rinomato is one of the only things which excites me in the nearly same way. Much more Gentian flavour but that’s what I love most about the Cocchi. It also has enough sweetness to use it as an aperitif. It’s a bit like Cocchi Americans with a splash of Suze mixed in!
Doesn’t do the same amazing Martini though. But also good! If you can find it buy it!
