Mango + Ginger
a Garnished with Good initiative
By Mathieu Pierrisnard
Bar: Rosalia's Menagerie in Amsterdam
When doing my research for creating this cocktail, I wanted to engage with the local community by supporting a smaller, local business here in Amsterdam and promoting sustainability.
I got the chance to contact the owners of Amsterdam City Farm Ginger Beer, a family-run business that seeks to create healthy organic soft drinks that go easy on Mother Earth.
They try to be as sustainable as possible through different methods, such as using only organic produce to make ginger beer, zero waste, a plastic-free business, and much more. When I explained to them about this competition and that I was looking for a sustainable mixer for my cocktail, they happily agreed to work with me on this project.
As for the garnish of my drink, I am reusing some mango flesh from one of our neighbours, a fresh juice stand on the Nieuwmarkt square in Amsterdam. The pieces of mango that I'm using were originally intended to go to waste at the end of the day, but I was able to give them a second life by drying the mango and carving mango coins for the garnish.
