"Wake Up call is a zero waste cocktail based on Ketel One Vodka, enriched with a tonic which was leftover is infused with the waste from the bar, as citrus zests and coffee waste from the coffee machine. After the infusion, the waste was reused to make an aroma for the cocktail."

Ingredients:
45 ml Ketel One Family-Made Vodka
90 ml Bar Waste Tonic
10 ml Bar Waste Tonic
To make Bar waste tonic:
1l Flat tonic water
200g citrus peels waste
10g Coffee beans
In a big jar we put our flat tonic and our citrus peels with coffee beans and let it sit over night, then we strain our mixture, strain it through cheesecloth and carbonate.
To make Aroma garnish:
We take our citrus peels from a jar after maceration, then dry and grind into dust for rapid citrus infusion aroma with Ketel One Vodka.
