With "From Within," Stefano is on a mission to create awareness for well-being in his bar community and encourage a more balanced lifestyle for hospitality workers to build more sustainable careers.

"Hospitality is the best job in the world." Many people have told me so, and I strongly agree with this! Unfortunately, there is a behind-the-scenes situation that people often neglect or do not see. "From Within" is an initiative where I will try to open up the topic of mental health in the hospitality community. Long hours, stress, and difficulties in socializing are side effects of working behind a bar. This topic is still kind of taboo; bartenders and professionals still find it difficult to speak about it or admit the need for help. With "From Within", I would love to help the community create a safe space for everyone feeling overwhelmed.

Furthermore, we do have a duty of care for our guests who walk daily in our bars, but we tend to forget the duty of care for ourselves and the community.

"From Within" aims to create a healthy environment where people can speak freely and not feel judged. By simply following the link shared below, bartenders and professionals will be able to access "From Within" which develops through various social channels, creating a network where I aim to connect with as many professionals as possible in order to raise awareness, participate in various activities and ask for help if needed, ultimately resulting in a space where everyone feels safe and can finally open up.

Through "From Within," we have the opportunity to create a healthier, more supportive environment for hospitality workers, which will benefit them and the industry as a whole.

The community symbol is the "From Within mix," which uses only elements associated with a mindful way of living. These ingredients helped me first get through different phases of my life; I encourage everyone to create their own "From Within" mix. I have already started a bottle boomerang with my local community to spread the initiative around my region, expanding the network even further.

All my life, I have struggled with various problems, often doubting myself and being scared to ask for help. I know most of us have faced some problems throughout the journey. "From Within" was created from this necessity, a bartender to all of us, to the world!

Alone we can do so little, together we can do so much! Help me in my journey to create a better a community and a safer space for all of us!

From Within

5 dash Saline Solution 15%
15 ml Toasted Wheat Elderflower Liqueur
40 ml Ketel One Family-Made Vodka
Top "From Within mix" Soda
Build directly in the glass, serve in a Highball, garnished with a candied snow pear.

To make the "From Within mix"
100gr Fresh Chinese Apple
150gr Fresh Green Apple
25gr Fresh Pak - Choi
25gr Fresh Carrot
225gr Greek Yoghurt
3gr Ascorbic Acid
6gr Malic Acid
100gr Sugar
Clean and cut all fresh ingredients. Juice green apple and Chinese apple using a centrifuge and combine with pak choi and carrot. Blend the mix together with the acids until smooth. Measure the yoghurt and pour the mix into it.

Allow to curdle and rest for 2 hours in the fridge. Strain through a coffee filter multiple times for a clearer result. Correct the sugar. Bottle and refrigerate. Carbonate at 4 bars and pour into an airtight bottle.
