Marco Aurelio Dorantes is a bartender in Mexico. His hometown is surrounded by many rivers and lakes, an ideal location for chinampas.

Chinampa is a farming method whereby flowers and vegetables are grown on the surface of lakes and lagoons. Often known as a floating garden or artificial island, the chinampas system is a traditional and sustainable farming option.

Marco's cocktail, the Ketal Juan, is a vegan riff on a Bloody Mary made using products of the chinampa cultivated by nearby farmers, including a mushroom brine and celery bitters.

As well as supporting chinampas by using these ingredients, the proceeds from Marco's cocktail will be donated to the farmers.
