Richard Grimsey began his bartending career in 2003 at a small hotel in Londonderry, Northern Ireland. A copy of The Art of the Cocktail by UK bartender Ben Reed ignited a spark for mixed drinks, the beautiful photographs and imagery contained had replaced the mouldy recipe filled “Bartenders Bible” and showed drinks in a more visual light.

A move to the country’s capital followed in pursuit of career evolution, here he worked through some of the citiy’s well know bars, learnt classic drinks, professional methods, attended the Lucas Bols Academy, and immersed himself in as many cocktail books and training sessions as possible. His creative flair for unusual flavour combinations and a love of flair bartending has seen him work events through his own cocktail events company and compete in several national and international competitions. He now lives in the northwest of Ireland with his partner and two children.

Glass: Sling
Garnish: Fresh ginger, lemon wedge & fresh cherry
Method: Shake first 4 ingredients with ice and strain into ice-filled glass. Top with Tiger Beer.
• 25 ml Bushmills Whiskey
• 25 ml Cherry Heering
• 12½ ml Ginger Real syrup
• 12 ml Fresh lemon juice
• 1 bottle Tiger beer
