With over ten years of industry experience, Laura hopes to bring a fresh mix of creativity and playful simplicity to the bar at SoBou, New Orleans. Raised in Massachusetts, she felt the siren call of the industry while attending college in Boston, and after graduating with a degree in writing and literature, realized she was as interested in communicating with peoples’ palates. After cutting her teeth in restaurants and bars from Beantown to Martha’s Vineyard, in every position from manager to pastry chef, Laura decided the blustery streets of the North were no match for her sunny disposition. Seeking warmth, both literally and figuratively, she moved to New Orleans to get a taste of the industry in a place renowned for its classic cocktails. After some vocational bar hopping through several amazing New Orleans spots, she believes she has met her match in the contemporary and lively environment of SoBou.
In all settings, whether a late-night locals lounge or a busy, upscale date spot, Laura’s primary goal has always been to spoil, surprise, and delight her guests. Openness, kinship, and connection are the original foundations on which taverns and public houses were built, and are as important to Laura as bitters to a Manhattan. So with a wealth of diverse experience, and a new found tranquility derived from a cheerful southern atmosphere, she has evolved into an excellent hybrid - a balance of strong, complex, and sweet that rivals even the perfect Negroni.

Laura’s Spiced Pineapple Sling
Glass: Sling
Garnish: Grilled pineapple, cherry, pineapple frond
Method: Muddle pineapple in base of shake. Add other ingredients, shake with ice and fine strain into ice-filled glass.
• 1 oz Gin
• 3/4 oz Cherry Heering
• 1/2 oz Spiced pineapple liqueur
• 1/2 oz Triple sec
• 2 pieces grilled pineapple
• 1/2 oz Fresh lime
• 1/8 oz Grenadine
• 2 dashes Angostura Aromatic Bitters
