In Jonas’ own words, “I am a fresh guy at 26 years old, I work daily as bar manager at a cocktail bar named Y's Cafe & Cocktail Bar, located in central Copenhagen.

The place is owned by a woman named Yvonny Kubach who has competed in competitions since 1992 (World Championships, National Championships and many more). She now leaves it to me to compete. Yvonny is the daily mentor for me and inspiration to do my job better and better, and to move my limits.

I love making cocktails because it gives me a daily freedom to be allowed to create new tastes and moving boundaries within the profession. My interest in cocktails have come from my love to cook and create my own taste in things.

Recently, I won the Danish championship in freestyle mixology (www.drinksmeister.dk), and have previously won other championships. My strengths are quite clear that I think out of the box, because I am one of the new boys on the field. I am very focused on hitting a taste that stands out, and to get the best out of the raw materials and the liquor.

Glass: Sling
Garnish: Raspberries & basil
Method: Shake first 5 ingredients with ice and strain intoice-filled glass. Top with lemonade.

• 4 cl Port Charlotte Scottish barley single malt whisky
• 1 cl Koskenkorva Valhalla herb liqueur
• 2cl Cherry Heering
• 2cl Monin pomegranate syrup
• 2 dash Angostura Aromatic Bitters
• Top with Schweppes lemonade
