Sin Kim Shin’s favourite Cherry Herring cocktail is the classic Remember the Maine, which appeared in Charles H . Baker’s 1939 The Gentleman's Companion.
This cocktail is named after the first United State Navy Ship, the USS Maine sunk by mysterious explosion at the Havana Habour in Cuba during the 1898 Spanish American War.
Sin Kim says, “My Remember the Maine is a cross between Manhattan & Sazerac. It tastes a bit spicy due to the 100 proof rye whisky and the light anise notes from the Absinthe. Sweet notes come from the Italian vermouth and Herring Cherry lingers towards the end.”

Sin Kim’s Remember The Maine
Glass: Martini
Garnish: Lemon zest twist
Method: Stir all ingredients with ice and strain into chilled glass.
• 45 ml Bulleit Rye
• 25 ml Antica Formula
• 10 ml Cherry Heering
• 3 drops Absinthe
